Why do official UFC PPVs cost extra everywhere else?

Because the licensed stack (ESPN+ in the US, TNT/other windows elsewhere — check UFC.com for your country) treats numbered cards as pay-per-view. That is the official product. IPTV-Sport is not a UFC partner and has no UFC licence.

What time should I order so the main card works?

Early prelims are the test stream. For a same-afternoon main card, message well before the start so there is time to pay, set up and test.

Fight Night / Apex-style cards often sit on a subscription window in official apps. Numbered PPVs generally do not — they are a separate checkout on the licensed stack.
